To begin take out your food processor, and plug it in. Next add into the food processor the chick peas, garlic, and baby spinach. Pulse the processor a couple of times, until the ingredients are finely chopped. Be sure to not blend them too smoothly, you want some texture left in the ingredients. Once done here, empty the contents into a large mixing bowl. Next add into the food processor the taco sauce, lemon juice, and grated cheese. Again pulse these ingredients a couple of times, until you have the desired coarse texture. Next empty these ingredients into your mixing bowl. From here take out a spoon and mix the contents of the bowl well, until you have a smooth creamy spinach dip. Use the mineral water to regulate the dip thickness.
